The Zero-Point-Five Pinot Noir offers a very appealing, vinous character; that is clean and fresh. Fruity notes of red currants and cherries are surrounded by a nicely embedded tannin structure and an almost dry finish. Of course, an alcohol-free wine will never have the same depth, structure and mouthfeel as a wine with alcohol, but the ZP5 comes extremely close and is simply a wine that tastes like ... Impressive! This can pair well with with roasts or game; it's a nice option with grilled fish or a lamb biryani. Enjoy the newest addition slightly chilled and in a large glass.

Variety: Non-alcoholic wine made with Tempranillo(60%) and Cabernet Sauvignon (40%) grape varieties.
Production: In-mouth sampling is carried out to determine the most appropriate days for the production of the alcoholic red wine, which will be the base of Élivo Zero Zero Deluxe. Once the optimum moment has been reached, the grapes are harvested manually and before destemming, the grapes are selected in the winery.
Once the grape has been destemmed, it is placed in maceration vats for a period of three to four days, at a controlled temperature of 14ºC. After the maceration process, fermentation is begun using cultured yeast. Overpumping is used during fermentation in order to provide colour and structure.
Once fermentation has been completed, the wine is racked and a young wine is produced, which complies with the quality requirements for dealcoholisation, passes to the next phase. After racking the wine, the dealcoholisation process begins. Dealcoholisation is carried out using a pressure system at a low temperature, where high pressure and a temperature of 30ºC are combined in order to convert the ethanol into vapour. The vapours are removed with a gas extractor and the rest of the wine remains in liquid state, without the ethanol. Once it has been dealcoholised, the product undergoes a partial ageing process, during which 60% of the wine which is to be dealcoholised is placed in French Oak barrels. The wine remains in the barrels for 4 to 6 months and is subject to an ongoing stabilisation process to ensure that the dealcoholised wine does not deteriorate in the barrels, despite not containing any ethanol. This process provides structure in the mouth. Then, the final coupage is carried out between the young wines and the aged wines, to obtain a smooth and well-structured product which is ready to be bottled.
Appearance: Cherry-red dealcoholised wine with high-intensity, strong violet tones. It is a wine which reflects light well, indicating its clarity and demonstrating a clean appearance.
Aroma: A sweet, fruity aroma, with hints of Cabernet variety. It presents a fragrant bouquet, signalling its aromatic complexity. Among these the smell of mature red fruits stands out, with a final scent of coffee. The combination is harmonised by subtle hints of oak.
Mouthfeel: A sweet, rich wine, with slightly distinguishable tannins and a characteristic acidity which makes it light and agreeable. As with the nose, fruit flavours are noted, integrated through the enveloping and pleasant tannic structure of the wine. The tannins are soft, without spikes and heighten the passage through the mouth. It has a fruity retronasal and a medium, pleasant aftertaste, in which the same aromas persist as in the nose. It is a healthy, natural product, very pleasant in the mouth and nose and very up to date.
Pairing: We have prepared this product for home consumption, to accompany daily dishes or your favourite starters. It can also be consumed alone, as a mid-morning or mid-afternoon refreshment, given that it is low in calories and helps you watch your weight.

Did you know that the Shiraz grape originates from Persia? Like Alexander the Great, who was Greek but had a couple of Persian wives, or those dudes from the movie “300”, this little Persian number will conquer you with its bold raspberry, red berries and peach tastes. But without all the destruction and pillaging. Just pure delightful flavour. So, I guess, nothing like Alexander the Great or those dudes from the movie “300”. And our Shiraz grapes came from Belgium.
Our winemaker approached us with the idea of making an alcohol free Shiraz. And we said, “Is that even possible? I mean, Shiraz is such a bold, complex wine. It would have to be extraordinary wine to begin with, and then carefully managed through the process where we remove all the “bad stuff.” And he said, “HA! Just watch me.” So we did. And then we drank it. And then we drank some more of it. And perhaps a bit more after that. He’s still waiting for our reply. And we’re still drinking it. Serve at: 8/10°C
Our Vin(Zero) Merlot is the kind of wine you drink. It’s drinkable, delicious, and very drinkable. And that’s not even the best part. The best part is that it’s drinkable. It doesn’t even matter what day it is, because its so drinkable, you can drink it on any day of the week. Especially if you have a glass that holds something drinkable. And maybe some cheese. And meat. And a glass. Did we mention how drinkable it is?
Our winemaker, Philippe, surprised us with this one. He typically produces wine traditionally, the old fashioned way. But with this wine, he decided to do something different and produce it traditionally, the old fashioned way. Then he matured the wine in stainless steel barrels. Which resulted in a very drinkable Merlot. I mean, even if you’re not a big fan of Merlot, I would still suggest this wine, simply because its so drinkable. It’s intensely red, like the juice squeezed out of a blackberry on to vanilla ice cream. It’s kinda got this curranty thing going on too, but more blackberry, maybe some blueberries in there. Heck, let’s just call this a bumbleberry pie of a wine that we recommend drinking. Best served at 15/18°C.
Lots of winemakers will tell you about the exact day, and the weather during the year their wine was vinted, and the name of the lady who stomped the grapes. Well, just like them, we have lots of great info to share about our Cab Sauv. This puppy tastes so bold and hearty, you’d think every ounce of flavour was squeezed out of the grape by a wrestler named Dave. Or a team of female Russian weightlifters. It’s big, bold, and juicy. In fact, the best way to describe this is with the title of the Who’s masterpiece of rock, “Meaty, Beaty, Big and Bouncy”. So there.
If you’re going to make great wine, you pretty much have to make a Cab Sauv. So we took on that challenge with everything we’ve got. And here it is. Dark ruby red, and deeper than the lyrics of Pink Floyd’s early stuff. I mean, really. Who the hell knows what they were writing about anyways? Certainly not me. But this wine is something else. Red currants, black currants, all kinds of currants, more currants than you know what to do with. And cherries. Which are really just big currants, aren’t they? But somehow it all comes together in the glass. Serve at: 12/16°C
